Ceremonial matcha from Maruyasu
Hakkakuten is the the top tea in the Maruyasu matcha portfolio. This single-origin matcha, made from the Samidori cultivar, highlights the remarkable skill required to produce such a refined tea, as single-origin teas are not blends and therefore demand greater expertise to achieve balance and depth.
Prepared as usucha, it is a vibrant, green matcha with delicate floral notes that evoke the freshness of spring. Light-bodied, creamy and gently sweet, it carries no bitterness, with a subtle nuttiness that lingers in the finish. Compared to Seihō, which sits below it in the portfolio, this tea is significantly mellower and noticeably less bitter.
Prepared as a koicha, it is an umami-rich, sweet and verdant tea, very balanced and free of any bitterness.
We recommend drinking this delicious tea straight, not as a latte.
The meaning of Matcha Hakkakuten "白鶴天" :
"白鶴" Hakkaku means white crane, "天” means celestial. In Japanese culture the crane is a powerful symbol of longevity, loyalty and good luck.
Maruyasu was established in 1872 and has since become a renowned tea manufacturer. Its representative, Yasushi Maeno, holds the prestigious title of "chashi kyudo," one of the highest qualifications for tea specialists in Japan.

STEP 1: Place 1.5–2 g (approx. ½ tsp or 2 chashaku (traditional tea scoop)) of matcha powder into a suitable tea bowl.
STEP 2: Pour 70 ml (2.4 fl oz) of 80°C (176°F) water over the powder.
STEP 3: Whisk (vigorously) with a chasen (tea whisk) until frothy.
❖ Warm the tea bowl with hot water first, then dry it thoroughly with a cloth. This helps maintain the ideal temperature and brings out the fresh aroma of the matcha.
❖ Sift the matcha powder through a fine strainer before use to prevent clumping (strongly recommended).
❖ Drink the matcha immediately after preparing it, as it may become more bitter as it cools.
❖ After opening the matcha packaging, consume all the tea within one month for the best experience.

Great and complex delicate pallet. But hard to whisk, so definitely sieve it before whisking.

A frustrating matcha. The taste is citrusy with spinach and contains only slight astringency. But it's a very hard matcha to whisk. Even at the higher temperatures (which it tolerates well), you've got to whish as if your life depends on it and still there will be some condiments left on the bottom. It goes without saying that sifting this matcha is an absolute must. Without it, you'll have lumps all over. Though it tastes well, I can only give it 3 stars for that reason. Not a matcha to serve for guests.
