Taiwanese oolong with dark berry and verdant notes
This well balanced 2026 spring Alishan oolong comes from the high-elevation tea gardens of Alishan’s Tefuyeh (特富野) area in Chiayi County. Made from the classic Qing Xin Oolong cultivar with medium fermentation and a gentle light-medium electronic roast.
Alishan’s high-mountain environment (800 to 1,400m) with frequent mist, short sunshine, and large day-night temperature differences produces teas with low bitterness and pronounced natural sweetness. Tefuyeh is a renowned sub-region within Alishan.
The dry leaves are evenly roasted with a consistent, attractive color. When brewed in a gaiwan (with the base gently warmed for enhanced aroma), the liquor pours a warm amber hue. The initial aroma is sweetly prune-like and comforting. When using a Wen Xiang Bei aroma cup, as it cools, the fragrance provides a lingering sweetness.
This tea uses Alishan Tefuyeh high-mountain leaves finished with roasting. The light-medium roast uses temperatures around 100°C applied slowly over a long time to penetrate deeply and evenly. It features a higher fermentation level that is relatively rare for high-mountain teas, allowing Alishan’s characteristic moist sweetness and the roast’s honey-like aroma to unfold beautifully. The aroma and flavor continue to evolve and captivate with each infusion. This was carefully roasted for those who enjoy roasted teas but prefer a lighter, not overpowering roast.
On the palate, expect warm graham cracker and subtle cinnamon notes layered with the roast’s relaxing character. Successive infusions reveal a greener feel from the underlying leaf. The aftertaste is delightfully fruity and sweet, bringing dark berries to mind, with a touch of lingering green grassiness adding a refreshing effect.
This is an approachable roasted Alishan oolong: comforting yet complex, with excellent balance between roast depth and mountain freshness. This tea is made well for multiple infusions.

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Rinse. Put the tea leaves in your vessel, pour hot water over them and then discard the water quickly. This step is for "waking the leaves" a little bit.
STEP 3) Brew. Pour boiling water on your rinsed tea leaves and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.
❖ After the first few infusions, you can increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
